BOXING DAY CHUTNEY (Apricot)
This apricot chutney is fresh, sweet and fruity. It is a lighter option to offer up on Boxing Day. Particularly if you’ve had a tad too much indulgence on Christmas Day.
I am often asked where I get my recipe inspirations and for the Boxing Day Chutney, I have two sources to thank.
First of all, a big thank you to all our customers who have been asking me of a chutney WITHOUT onion for the last five years. However, of course, we couldn’t stop there. We have used organic cider vinegar so that means no gluten. Also, after trials, we opted to use UNSULPHURED dried apricots which are the dingy dark ones not the bright orange ones. The bright orange apricots are only that colour for one reason: sulphites! Although preserving is my middle name, I am definitely not one for preserving by spraying things with sulphites!
Secondly, a massive thank you to a lovely lady called Rose. I had the good fortune to meet Rose, along with a great group of ladies, at a Yoga Class at The Haven, Hereford. I say fortunate because we were and are all standing, apart from when we’re in yoga pose, of course.
She inspired the Boxing Day Chutney recipe, I was one of her favourites and it was passed to me on a beautifully hand written piece of paper, which I treasure. But of course, I had to meddle a bit.
